Nacho Breakfast Pie

Let me just start off by saying that I love to cook (as if it wasn't enough of a clue that the first picture of my blog was that of my new kitchen!), and I mostly create dishes out of what I have onhand, but I'm terrible about measuring as I go along. I will try to do better at this for the purposes of this blog. But most of the time I'm in a hurry, and not thinking about trying to re-create whatever it is that I'm throwing together. If you can relate, then, hurrah! - we have the same culinary communication skills. If you like more more structure when it comes to cooking, then I hope I am able to inspire or at least entertain by sharing my experiences in the kitchen.

And now, for my blog's first recipe - Nacho Breakfast Pie! (Seems fitting that my first recipe blog should concern the first - and often my favorite - meal of the day - breakfast!)



So, last night I made some simple nachos with tortilla chips, banana peppers and cheese. They went well with a movie in bed (perfect way to end a workweek). Well, I couldn't eat all the nachos in one sitting, so I decided to save the leftovers to eat later. Then this morning I had a brainstorm - what about Nacho Breakfast Pie?

I had baked the nachos in a round Pyrex dish, so this allowed for the idea of a breakfast "pie" to work. I had about one even layer of nahcos, so I beat 4 eggs with some milk and poured this mixture over the nachos. Then I sprinkled the egg/nacho mixture with some sliced grape tomatoes, sliced green onions and some chopped cilantro. Season to taste, bake for 20 minutes at 350 degrees and they're ready to enjoy. I served mine with a dollop of salsa on the side; some sour cream would be nice as well. Bon appetit!
